Corn Fritters

Crispy and fresh, these fritters are easy to make, and fun to serve and eat! You’ll love the combination of sweet corn, cilantro, and spicy green peppers.

Instructions
Preheat oven to 250 degrees and line a sheet pan with paper towels.
As you fry the fritters, you will place them on the lined sheet pan to keep warm and crisp in the oven while you complete frying all of the fritters.
If using fresh corn on the cob, carefully use a sharp knife to slice the kernels from the cob and place in a large bowl. Otherwise, add the canned or frozen corn, whichever using, to a large mixing bowl.
Add all the other ingredients, minus oil and dipping sauce. Stir well, mixing thoroughly until all ingredients are well combined. The batter should be firm enough to hold its shape, but not stiff.
In a large skillet, heat oil about 1/2" deep until 350°F.
Add large spoonfuls of corn batter to the hot oil, spreading out with back of spoon to make a round fritter about 3 inches in diameter.
Fry for about 2 minutes on the first side.
Flip the fritter and fry the second side for 2 additional minutes, until cooked thoroughly and golden brown.
If the fritters begin to brown too quickly before they are fully cooked, lower the flame to avoid burning the fritters.
Place on the paper towel lined sheet pan and maintain hot in oven while frying the remaining fritters.
Serve with Thai Sweet Chili Sauce. Enjoy!
Notes
If you are unable to find Thai green chiles at your local grocer, a serrano chile pepper or even a jalapeño can be substituted. Thai chiles will be the spiciest of these three and jalapeños the mildest.
