Sometimes the simplest dishes are the ones that round out a meal the best. This classic cole slaw is cool, lightly tangy, and just creamy enough—perfect alongside rich dishes like stewed chicken, rice and beans, and fried plantains. It comes together quickly and is even better after a short rest in the fridge.

Instructions
In a large bowl, combine the shaved cabbage and grated carrot.
Add the mayonnaise, white vinegar, and sugar. Toss until everything is evenly coated.
Season with salt and pepper to taste. Adjust as needed.
Optional: For best flavor, cover and refrigerate for about 30 minutes before serving.
