In March, my husband and I traveled to Belize on a mission trip, and what came back with us were the memories made, meals shared around tables there, and friendships that were hard to leave behind. This collection is our way of honoring that experience—simple ingredients, unique flavors and recipes that reflect the heart of Belizean cooking. You’ll find dishes that are humble but deeply satisfying: stewed chicken rich with recado, coconut rice and beans, golden fry jacks, crisp plantains, and a fresh slaw to bring it all together.
