These no-bake Almond Joy Energy Bites are rich with chocolate, coconut, and almonds — but packed with nourishing ingredients that make them the perfect prep-ahead snack. Keep a batch in the refrigerator for quick breakfasts, afternoon pick-me-ups, or something sweet after dinner.

Instructions
Add all energy bite ingredients to the bowl of a stand mixer.
Mix until fully combined and a thick, cohesive dough forms.
Scoop and roll into bite-sized balls (about 1 tablespoon each).
In a shallow bowl, combine the coconut flakes and crushed almonds.
Roll each energy bite in the coconut-almond mixture to coat.
Store in an airtight container in the refrigerator for up to one week.

Flaxseed is rich in omega-3 fatty acids and fiber and is known for supporting digestion and helping reduce inflammation.
However, whole flaxseeds pass through the body largely undigested. To access their nutritional benefits, they must be ground. Once ground, flaxseed begins to lose potency fairly quickly.
For maximum nutrition, purchase whole flaxseeds and grind them fresh in a small coffee mill before using. While pre-ground flaxseed meal (often found in the refrigerated section of health food stores) is convenient, freshly ground flax offers the greatest benefit.
