When searching for the perfect bacon wrapped chicken recipe, I came across this one, from an article interviewing the founder of Texas de Brazil. He graciously shared this amazing chicken recipe, and I was thrilled with the results! Bacon wrapped chicken perfection has now been achieved!

Marinade
Mix together all marinade ingredients.
Bacon Wrapped Chicken
Cut salted chicken into roughly 1”x2” pieces. Add to marinade and allow to sit at least an hour, or overnight.
Take a piece of the marinated chicken and place on a strip of bacon. Top with a sage leaf and roll up the chicken and bacon into a pinwheel. Run two skewers crosswise through the pinwheel. Several pieces can be placed on each skewer - see the pictures above. Repeat with all the pieces.
Metal or pre-soaked wooden skewers will work here.
Prepare charcoal grill to 400°F-500°F degrees. Place the skewers on the grill and cook, turning the skewers frequently, until the bacon is crispy, and charred and the chicken is cooked through, about 15 minutes.
Avoid over cooking the chicken to ensure it remains moist and flavorful.
Transfer to a platter and serve.
