Forget the bottled stuff—this homemade Caesar dressing is in a class of its own. It’s creamy, zesty, and full of flavor, but so simple to make you’ll wonder why you didn’t start making it from scratch sooner.

Instructions

  1. Place all the caesar dressing ingredients into a blender and blend until smooth, approximately 1-2 minutes.

  2. Place the lettuce (2 heads) into a large bowl and toss with the dressing.

    You may not need all of the dressing for this salad. Use only as much as you prefer as some people like their salads more lightly dressed than others.

  3. Lay the dressed lettuce on a serving platter or salad bowl, sprinkle with Parmesan (½ cup), croutons (1 cup), and black pepper ( to taste).

Notes

The dressing can be made up to three days in advance.
