Fresh herbs, quality olive oil, with a hint of spice - chimichurri is the perfect, mellow, and deeply flavored accent that takes grilled meats up a notch. Don't wait for Brazilian steak night - this is a classic you will want to serve with everything. It makes a wonderful salad dressing as well.

In the bowl of a food processor, add the shallots, parsley, garlic, oregano, pepper, and cilantro. Pulse until roughly chopped.
You do not want it to be smooth like pesto. Alternatively, each ingredient can be finely chopped by hand. A mortar and pestle works great for the garlic.
Once your herbs are chopped and ready, transfer them to a small mixing bowl and add the vinegar, olive oil, and salt to taste. Last but not least, add that dash of crushed red pepper!
