Fresh herbs, quality olive oil, with a hint of spice - chimichurri is the perfect, mellow, and deeply flavored accent that takes grilled meats up a notch. Don't wait for Brazilian steak night - this is a classic you will want to serve with everything. It makes a wonderful salad dressing as well.

Instructions
- In the bowl of a food processor, add the shallots, parsley, garlic, oregano, pepper, and cilantro. Pulse until roughly chopped. - You do not want it to be smooth like pesto. Alternatively, each ingredient can be finely chopped by hand. A mortar and pestle works great for the garlic. 
- Once your herbs are chopped and ready, transfer them to a small mixing bowl and add the vinegar, olive oil, and salt to taste. Last but not least, add that dash of crushed red pepper!

This is a wonderful accompaniment to any grilled meat and also very tasty on eggs for breakfast.
