Light, fragrant, and just a little creamy, this coconut lime rice is a versatile side that pairs beautifully with grilled meats, seafood, or roasted vegetables. Toasted coconut and fresh cilantro add texture and brightness, making it just as delicious on its own as it is as the base for a nourishing bowl.

Instructions
Melt the coconut oil in a medium saucepan over medium heat.
Add the rice, garlic, salt, and diced onion. Cook for several minutes, stirring frequently, until the rice becomes fragrant and lightly toasted.
Stir in the toasted coconut.
In a measuring cup, combine the coconut milk, lime juice, and enough water to equal 4 cups of total liquid. Add this mixture to the rice along with the chicken broth.
Bring to a gentle simmer. Reduce heat to low, cover, and allow the rice to cook until tender and the liquid is absorbed, about 18–20 minutes.
Remove from heat and gently fold in the chopped cilantro.
Fluff with a fork and serve warm.
