Roasting sweet potatoes with pineapple creates a beautiful balance of savory and sweet. The potatoes become tender with crisp edges while the pineapple caramelizes and concentrates in flavor. This simple dish works well as a side but also makes a wonderful component in bowls with rice, grilled fish, or roasted vegetables.
Preheat oven to 425°F.
Wash and trim the sweet potatoes, then cut them into medium-sized chunks.
Peel and core the pineapple, cutting it into chunks roughly the same size as the sweet potatoes.
Place the sweet potatoes and pineapple on a large rimmed baking sheet.
Drizzle with olive oil and sprinkle with the coarse salt and crushed red pepper flakes.
Toss everything together until evenly coated, then spread into a single layer.
Roast for 20–30 minutes, stirring occasionally, until the sweet potatoes are tender and the pineapple is caramelized around the edges.
This dish makes a wonderful side when serving Jamaican or Caribbean-inspired meals. It is also excellent served over rice or used as a component in grain bowls with grilled fish, avocado, and fresh herbs.
