Light, fragrant, and full of comforting flavor, this Mediterranean Rice Pilaf is more than just a side—it’s the perfect base to elevate any meal. Fluffy basmati rice is tossed with golden sautéed onion, garlic, plenty of butter, and a generous helping of toasted almonds for crunch.
While it pairs beautifully with our Santorini Chicken, it’s just as delicious alongside grilled meats, roasted vegetables, or as part of a vibrant Mediterranean-inspired spread. Simple, elegant, and absolutely satisfying.

Instructions
Melt the butter (1 stick) in a sauté pan over medium-high heat.
Add the onion (1 small) and sauté, stirring occasionally, until it becomes translucent, about 7 minutes.
Add the garlic (3 cloves) and almonds (⅓ cup), stirring frequently, until the almonds are fragrant and just beginning to brown, about 7 minutes more.
Keep a close eye as the almonds can go from nicely browned to burnt very quickly!
Add the cooked rice (3 cups) and gently stir until everything is well combined and heated through.
Transfer to a serving dish and serve while warm. Enjoy!
