Light, fragrant, and full of comforting flavor, this Mediterranean Rice Pilaf is more than just a side—it’s the perfect base to elevate any meal. Fluffy basmati rice is tossed with golden sautéed onion, garlic, plenty of butter, and a generous helping of toasted almonds for crunch.
While it pairs beautifully with our Santorini Chicken, it’s just as delicious alongside grilled meats, roasted vegetables, or as part of a vibrant Mediterranean-inspired spread. Simple, elegant, and absolutely satisfying.

Instructions
- Melt the butter (1 stick) in a sauté pan over medium-high heat. 
- Add the onion (1 small) and sauté, stirring occasionally, until it becomes translucent, about 7 minutes. 
- Add the garlic (3 cloves) and almonds (⅓ cup), stirring frequently, until the almonds are fragrant and just beginning to brown, about 7 minutes more. - Keep a close eye as the almonds can go from nicely browned to burnt very quickly! 
- Add the cooked rice (3 cups) and gently stir until everything is well combined and heated through. 
- Transfer to a serving dish and serve while warm. Enjoy!
