This vibrantly fresh salad goes well with any Asian meal. The peanut dressing is packed with flavor. It can also be made well in advance, which is a huge plus in my book!

Salad

  1. Prep all salad ingredients and layer on a large platter.

    If you're prepping this salad ahead, wait until right before serving to add the chow mein noodles and roasted peanuts.

  2. Place all of the dressing ingredients into a blender and blend until smooth.

    This can be made up to two days in advance.

  3. Serve and enjoy!

Notes

You can serve the salad layered on a platter and pass the dressing separately or you can toss the salad in a large bowl with the dressing right before serving. It's not as pretty this way but it is tastier as the dressing is better distributed throughout the salad.
