This is one of those recipes that feels almost too simple to write down, but ends up being the thing everyone gathers around. Light, creamy ricotta is brightened with a touch of citrus and honey, then finished with herbs and a little crunch on top. It’s fresh, balanced, and just a little unexpected. Set it out with a platter of spring vegetables, and it becomes the easiest way to start a meal—something to snack on, linger over, and come back to again and again. Finished with a sprinkle of toasted walnuts and a pinch of floral sea salt, it feels just a little special without any extra effort.

Instructions
In a food processor, combine ricotta, honey, orange juice, orange zest, and thyme. Blend until smooth and creamy, about 1–2 minutes.
Spoon the whipped ricotta into a serving bowl or onto a shallow plate. Use the back of a spoon to create soft swirls.
Sprinkle with toasted walnuts, sumac, and flaky sea salt.
Serve with fresh spring vegetables for dipping.
